Tonight's dinner was what we called barnyard pie. I'd been wanting to make a chicken variant of cottage pie for a while, and it was gorgeous, tasty and comforting, definitely one to make again.
Ingredients
2 chicken breasts
2 leeks
2 carrots
2 cloves of garlic
2 rashers of bacon
Flour
Milk (about a pint in total)
Brie (most of a generous wedge)
Potatoes
Butter/margarine
Cube and fry the chicken off in a little oil. Cut the leeks in half lengthways, then into little strips, and add them to the pan. Peel and slice the carrots, and stir them into the mix. Fry the bacon off in one end of the pan, and then stir through. Add two cloves of crushed garlic.
Peel and chop the potatoes, then put them on to boil for the mash.
Sprinkle about a tablespoon of flour over the meat and veggies and stir through. Pour about 2/3 of a pint of milk over the mix, and turn the heat up to a simmer to thicken. Chop the Brie into chunks and stir into the sauce. Add pepper if desired. Once the cheese has melted and the sauce is thick and tasty, turn it down very low and put a lid on it.
Preheat a hot grill.
Once the potatoes are ready, mash them with the rest of the milk and the butter, and top the sauce with the potatoes (fork made mowing lines optional, brrm-brrm noises very optional!). Pop it under a nice hot grill until the top is lightly browned.
